Two-ingredient Banana and Egg Pancakes - Gluten- Free and Dairy-Free

 

Since my intolerances got diagnosed (I’m gluten free and dairy free) and even prior to that I was always a huge proponent of eating simply. My stomach could rarely handle really complicated recipes and I came to the realization the more real food in each recipe the better I felt. One of the first things anyone can implement when trying to start a healthier lifestyle is to eat more real food, cook more often at home and choose things that are easy to make and hard to get wrong. These small changes can make your healthy lifestyle more fun and cooking at home more attainable because as you learn what you like you enjoy cooking and experimenting more. These two ingredient egg and banana pancakes are a favourite of mine for breakfast as they are rich in protein thanks to the eggs and they go well with any topping. Delicious and your stomach will thank you!

Ingredients:

  • 2 ripe bananas

  • 2 large eggs

Instructions:

  1. Mash the Bananas:

    • Peel the ripe bananas and place them in a mixing bowl.

    • Use a fork to mash the bananas until you achieve a smooth consistency.

  2. Add Eggs:

    • Crack the eggs into the bowl with the mashed bananas.

  3. Mix Thoroughly:

    • Use a fork or whisk to thoroughly mix the eggs and bananas together. Ensure a well-combined batter with no lumps.

  4. Cooking the Pancakes:

    • Heat a non-stick skillet or griddle over medium heat.

    • Scoop a small amount of the banana and egg batter onto the hot surface to form each pancake. You can adjust the size based on your preference.

  5. Cook Until Golden Brown:

    • Allow the pancakes to cook for 1-2 minutes on each side, or until they turn golden brown.

    • Carefully flip the pancakes with a spatula to cook the other side.

  6. Serve and Enjoy:

    • Once both sides are cooked to perfection, transfer the pancakes to a plate.

    • Serve them warm and enjoy the natural sweetness of the bananas in this delicious, quick, and easy two-ingredient pancake recipe.

Feel free to get creative with toppings! Add a drizzle of honey, a sprinkle of cinnamon, or top with fresh berries for an extra burst of flavor. These pancakes are not only simple to make but also a healthy and delightful treat for any time of the day.
