Tahini Almond Butter Chocolate Chip Cookies

My dream cookie

I remember when I first started cooking or baking I would always search for recipes online and the first thing I noticed with cooking blogs was you had to scroll for so long on people’s posts before you got to the actual recipe. Especially when you are standing at the grocery store trying to make sure you have all the ingredients to make cookies. It was my least favourite part, I am always like just get to the good stuff. The best part was obviously looking at the finished product because who really cares about the step-by-step. In my case, I always take a photo of the finished product but I can never actually get a good photo of the process because my kitchen just looks like a tornado hit it (my poor husband). But I am getting better at the photo part. Anyway thank you for reading and getting excited about my favourite recipes and if you try this let me know how it turns out!

For me, baking is one of my most preferred hobbies because its so satisfactory to actually completely create something that you then actually want to taste. I also love when I can find and create recipes that are truly clean and balancing for your hormones and blood sugar but do not sacrifice on feeding your cravings. I also really don’t like that feeling when you just ate something so sweet that your heart is beating too fast to try to metabolize the sugar. Since trying to cut out refined sugar I have been on the hunt for the best recipes and this creation is truly perfect. For a few reasons. This cookie is probably all my favourite things in one. It’s lactose-free and gluten-free while also having healthy fats such as tahini and coconut oil or olive oil, as well as protein from the almond butter and almond flour. I love making cookies that feel so close to the original version of a cookie where you almost cannot taste the difference and I find this one does just the trick. It’s more crumbly than the original chocolate chip cookie but the mix of maple syrup and coconut sugar make it gently sweet where you don’t feel like your blood sugar is spiking to the sky.

I don’t know if cookies are a North American thing but I truly love a good healthy cookie.

OH and my trick with any cookie or brownie to bring out sweetness is to sprinkle a bit of sea salt on it when it comes out of the oven. So this cookie is a mix of sweet and salty and completely clean ingredients which is the ultimate combination.

Ingredients:

2 heaping scoops of almond butter (about 1/4 cup)

1/2 cup almond flour

2 heaping scoops of tahini (about 1/4 cup)

3 tablespoons maple syrup

2 tablespoons coconut sugar

1 tablespoon light olive oil or coconut oil

Chocolate chips (as much as desired)

Sea Salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.

  2. In a mixing bowl, combine the almond butter, tahini, maple syrup, coconut sugar, and olive oil or coconut oil. Mix until well combined.

  3. Gradually add the almond flour to the mixture, stirring until a dough forms. If the dough seems too sticky, you can add a bit more almond flour until it reaches a consistency that's easy to work with but usually its fine.

  4. Fold in the desired amount of chocolate chips into the cookie dough, ensuring they are evenly distributed.

  5. Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving a bit of space between each cookie.

  6. Use a fork to gently flatten each cookie, creating a crisscross pattern on top.

  7. Bake the cookies in the preheated oven for 10-12 minutes, or until they're lightly golden around the edges.

  8. Remove the cookies from the oven and add a few sprinkles of sea salt on them and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  9. Once cooled, enjoy your delicious Almond Tahini Chocolate Chip Cookies!

These cookies are nutty, slightly sweet, and have a delightful chocolatey flavor from the added chocolate chips. I find these perfect for indulging your sweet tooth or as a midday snack because they are so protein rich. A word of warning though because I literally cannot stop myself when I make them put them out of eye sight otherwise you cannot help yourself!
